How to judge pistachio quality: 6 things to check
Two bags of pistachios can look alike and taste completely different. These six checks, used by professional buyers, help you tell a premium lot from an ordinary one.
1. Open-shell rate
A pistachio splits open on the tree when the kernel inside has fully matured. A high share of naturally open shells is one of the clearest signs of a healthy harvest and careful sorting. Premium lots reach 90–95% open shell. Many closed nuts usually mean underdeveloped kernels.
2. Moisture
Properly dried pistachios are crisp and keep well. Too much moisture makes them soft, shortens shelf life and raises the risk of mould. Well-dried pistachios sit at a moisture level of around 5–7% or lower. Natural sun-drying, done quickly after harvest, is the traditional way to get there.
3. Shell colour
A good shell is light, clean and even in colour. Dark stains usually mean the outer hull stayed on too long after picking. That is why the time between harvest and hulling matters, and why we hull our pistachios quickly after they are hand-picked.
4. Kernel colour
Open a few nuts. A fresh kernel is green to yellow-green, often with a purple skin. Greener kernels are prized in confectionery because they keep desserts bright. Brown or pale, shrivelled kernels point to an old or poorly stored lot.
5. Uniform size
Check that the nuts are close in size. A consistent size grade, measured in nuts per ounce, shows careful sorting, and it matters for roasting, because uniform nuts roast evenly. Mixed sizes in one bag are a sign the lot was not graded properly.
6. Safety and freshness
For businesses, ask for the crop year and for test results on aflatoxin, a natural toxin that strict markets such as the EU limit tightly. For home buyers, the nose is the simplest test: fresh pistachios smell sweet and nutty, never musty or rancid.
A quick checklist
- Mostly open shells, few closed or empty nuts
- Crisp, not soft or chewy
- Light, clean shells without dark stains
- Green to yellow-green kernels
- Even size throughout the bag
- Fresh, sweet smell and a recent crop year
